Krankies Inspired Sweet Potato Cinnamon Rolls

I recently made a trip to Winston-Salem! While I was there I went to Krankies and tried their sweet potato cinnamon roll! It was a dream! Since I live far enough away to not make a weekly trip, I created my own recipe! Hope y’all enjoy!


Sweet Potato Cinnamon Rolls - by Taylor McLean


Dough

  • 3 cups flour

  • 1 tbsp yeast

  • 1 cup warm milk

  • 2 tbsp sugar

  • 1 tsp salt

  • 3 tbsp butter (softened)

  • 1/2 cup sweet potato (puréed)

  • 1 tsp pumpkin pie spice


Filling

  • 1/2 cup brown sugar

  • 1/2 cup sweet potato purée

  • 2 tbsp butter (melted)

  • 1/4 tsp cinnamon

  • 1/4 tsp pumpkin pie spice


Icing

  • 1/2 cup butter (softened)

  • 2 cups powdered sugar

  • 1/4 cup sweet potato purée

  • 1 tbsp milk

  • 3 dashes pumpkin pie spice


Instructions

  • Mix warm milk, yeast, and sugar together. Let sit for a few minutes. Mix in salt, butter, flour, pumpkin pie spice, and sweet potato purée.

  • Mix until solid dough is formed. Dough shouldn’t be sticky, and should fall away from the side of the bowl. Place in a lightly greased bowl, cover with towel, and set aside for an hour.

  • Make the filling my mixing everything together.

  • Take dough and place on floured surface. Roll out into a rectangular shape, about 1/4 - 1/2 inch thick. Spread filling over the entire surface. Roll up the dough long ways to create a log. Cut into 12 pieces. Place in a greased pan, and let rise for 30-45 minutes.

  • Make icing by creaming the butter, add 1 cup of sugar at a time, then vanilla, milk, pumpkin pie spice, and sweet potato purée.

  • Heat oven to 325 and bake for 12-14 minutes. Pour icing over immediately and serve warm!
