Krankies Inspired Sweet Potato Cinnamon Rolls

I recently made a trip to Winston-Salem! While I was there I went to Krankies and tried their sweet potato cinnamon roll! It was a dream! Since I live far enough away to not make a weekly trip, I created my own recipe! Hope y’all enjoy!
Sweet Potato Cinnamon Rolls - by Taylor McLean
Dough
3 cups flour
1 tbsp yeast
1 cup warm milk
2 tbsp sugar
1 tsp salt
3 tbsp butter (softened)
1/2 cup sweet potato (puréed)
1 tsp pumpkin pie spice
Filling
1/2 cup brown sugar
1/2 cup sweet potato purée
2 tbsp butter (melted)
1/4 tsp cinnamon
1/4 tsp pumpkin pie spice
Icing
1/2 cup butter (softened)
2 cups powdered sugar
1/4 cup sweet potato purée
1 tbsp milk
3 dashes pumpkin pie spice
Instructions
Mix warm milk, yeast, and sugar together. Let sit for a few minutes. Mix in salt, butter, flour, pumpkin pie spice, and sweet potato purée.
Mix until solid dough is formed. Dough shouldn’t be sticky, and should fall away from the side of the bowl. Place in a lightly greased bowl, cover with towel, and set aside for an hour.
Make the filling my mixing everything together.
Take dough and place on floured surface. Roll out into a rectangular shape, about 1/4 - 1/2 inch thick. Spread filling over the entire surface. Roll up the dough long ways to create a log. Cut into 12 pieces. Place in a greased pan, and let rise for 30-45 minutes.
Make icing by creaming the butter, add 1 cup of sugar at a time, then vanilla, milk, pumpkin pie spice, and sweet potato purée.
Heat oven to 325 and bake for 12-14 minutes. Pour icing over immediately and serve warm!
